Ingredients:
35g of ground coffee or 6g instant coffee
1 tsp cinnamon powder
150ml milk or water
1 tbsp sugar or honey (optional)
Instructions:
Brew ground coffee in a moka pot or mix instant coffee with warm water.
Heat milk or water, add cinnamon powder and sweetener.
Pour the warm mixture over the brewed coffee and enjoy your warm, healthy cinnamon coffee.
Tip: Substitute cinnamon with cardamom for a variation.

½ cup strong brewed Java coffee
½ cup caramelized pumpkin puree
1½ cups heavy cream
4 egg yolks
⅓ cup sugar
1 tsp vanilla extract
1 tbsp gelatin (or 3 gelatin sheets)

¼ cup espresso
¼ cup Thai ginger syrup
2 oz dark chocolate (chopped)
1 tbsp cornstarch
Instructions:
Mousse: Make crème anglaise by whisking egg yolks and sugar, adding heated cream, and stirring in vanilla. Combine with coffee, pumpkin puree, and dissolved gelatin. Fold in whipped cream and refrigerate to set.
Coulis: Heat espresso, ginger syrup, and chocolate. Thicken with cornstarch and cool.
Drizzle the coulis over the set mousse and serve.

½ tsp baking powder
¼ cup chopped almonds (optional)
Instructions:
Preheat oven to 175°C. Grease and line an 8×8-inch baking pan.
Mix melted butter, chocolate, eggs, sugar, coffee, almond milk, and prune paste.
Sift in flour, cocoa, baking powder, and fold until combined.
Pour into the pan, sprinkle almonds, and bake for 25-30 minutes. Cool and serve.
